Failing to prepare is preparing to fail.

last week I lost 1/2lb – this week I gained 2. 

3 weeks of work undone... all because we ate out too many times. L I NEED to get back on track and start focusing again. 

So – with the aid of pinterest and google I got inspired to try bulk prepared freezer meals. Hopefully, with my freezer fully stocked with yummy meals, I will be less likely to fall off the wagon at dinner time – especially as they are all slow cooker meals so they are on and cooked by the time I get home from work - A period of time I like to call “the danger zone”!! I come home tired and drained after a long day in the office, last thing I want to do is slave away over an oven.

I picked 4 recipes that I knew me and hubby would like and bought all the bits I needed. I found that I already had ALOT of it in the store cupboard – so the shopping bill wasn’t too bad! The recipes I picked were Beef casserole, chilli con carne, campfire stew and Chinese pork. Each recipe makes 4.

 

I forgot to take pics during the chaos that was prepping and bagging it all but here’s the 8 meals I ended up with. Each bag is a 2 portion meal (so I have 2 x bags of each recipe).


If I was cooking these fresh I would have probably just split it between 2 plates with a 1 small portion leftover for lunch the nexct day – doing this has made me portion out the recipes properly – always a good thing  

I got the ziplock bags from Tescos – they are a medium size, plenty big enough for 2 portions – probably big enough for 4 if you didn’t want to freeze them flat. However – freezing them flat means they are easier to store in the freezer. I froze the Chinese pork upright as a block due to all the liquid – I had visions of the whole thing leaking as it froze if I laid it down. 

The meal name, cooking instructions and whether anything needs adding once thawed is written in sharpie marker on the freezer bag.

 We have beef casserole 2nite for dinner – im really looking forward to it. planning a 100% on plan this week – and fingers crossed the slow cooker is gonna help with that.

Next mission – find some ‘non-stew’ like slow cooker meals... I love the 1 bowl dinners but hubby likes stuff cooked separately. Might try and find some SW BBQ rib recipes...
